- 1 tall carrot, peeled and grated
- 6 slices of organic turkey breast
- 6 leaves of lettuce chopped up
- ½ cup Dijon mustard
- Spread mustard evenly on turkey slices to edges.
- Top each piece of turkey evenly with carrot and lettuce. Roll up each slice of turkey; wrap securely. Refrigerate for at least 15 minutes.
