- 1-2 cups lettuce of your choice w/ arugula
- 1 tomato
- 2 hard-boiled eggs
- 1 Tbsp. black beans
- 1 Tbsp. sunflower seeds
- 1 Tbsp. fresh lemon
- 1 Tbsp. extra virgin olive oil
- salt & pepper to taste
Directions
- Put your lettuce and tomatoes on a large plate
- Top with sliced tomato, eggs, beans, and sunflower seeds.
- Add dressing (olive oil and lemon) over your salad
- Add salt and pepper to taste (optional)
