Egg Avocado Salad

Ingredients

Serves: 1

  • 3 eggs
  • 1/4 red pepper diced
  • 2 tbsp olive oil
  • 1 mashed avocado

Directions

  1. Place eggs in a pan, fill with water, and boil for 20 minutes
  2. Peel eggs and mash them in a mixing bowl.
  3. Add pepper, olive oil, and avocado and mix well.
  4. Enjoy on lettuce, ezekiel wrap, or ezekiel bread.
