- 3 cups organic vegetable broth
- 2 cups chopped broccoli
- 1 small white onion, diced
- 1/4 cup kefir
- 1 1/2 cups organic cheddar cheese
- Sea salt and pepper to taste
- Stir together stock, diced onion, and broccoli in a medium saucepan. Heat over medium heat until
it comes to a boil.
- Reduce heat to medium, and continue boiling until the onions soften.
- Stir in the kefir and continue cooking until the mixture returns to a simmer.
- Remove from heat and stir in the cheese until melted.
